Fabulous and simple Raw Carrot Cake

Happy Easter weekend! Let’s celebrate Easter by making fresh carrot juice, and with the carrot pulp from the juicer….make a living carrot cake!

Fabulous and simple Raw Carrot Cake
Preparation time: 10 min
Carrot pulp (from juicer) of 6 large carrots
½ cup dehydrated shredded coconut
¼ cup cashews
¼ cup walnuts (optional)
3 dates, pitted and soaked for 20 minutes to soften
the yest of 1/2 blood orange (use navel orange or lemon if that's what you have)
the juice of that same blood orange, simply squeezed into the food processor
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
½ teaspoon glove (optional)
½ cup raisins (optional)

Frosting
½ cup raw coconut oil
¼ cup yacon syrup or pure maple syrup
¼ inch fresh ginger, thinly diced

It’s so nice to have a great recipe to use up the perfectly healthful carrot pulp left in your juicer after you make fresh carrot juice! One of my favorite treats?

Take this carrot pulp from your juicer and put it in your food processor. Simply add all of the ingredients except raisins, and blend to the consistency of your liking. Fold in raisins with spoon. Scrap contents with a spatula into a glass loaf pan, or 8x8 glass dish. Cover and Place in refrigerator.

To make frosting: liquefy coconut oil by putting the glass jar in a bowl of warm water. Pour coconut oil in food processor along with all other ingredients and blend until smooth. Pour on top of the carrot cake and refrigerate for at least 20 minutes before serving. The coconut oil solidifies nicely for a perfectly delicious, extremely smooth, healthful frosting.

This will look beautiful and taste amazing, a wonderful offering to yourself and guests. This carrot cake makes for a great breakfast too! It’s ready to eat, and highly nutritious. Rich in fiber, enzymes, vitamins A C K and much more, this treat will serve you in being your very best.
