Good food is Art, Red Cabbage Supernal

This bright purple recipe was inspired by my beautiful friend Lenise Soren, of Sorenity Rocks, who made me brussel sprouts the other night for dinner and reminded me of this glorious vegetable family. Her brussel sprout recipe follows below.

Red Cabbage Supernal

1 head of red cabbage
2 tablespoons tamari
2 tablespoons cold pressed sesame oil

Preheat oven at 350. Boil the portion of the cabbage you wish to bake for 5 min. The water becomes the prettiest purple color, feed it to your houseplants after it cools off. If I make this as a main course and serve it with a raw kale salad, use 1 cabbage for 2 people. If this is a side dish served with a main course of quinoa, wild rice or meat, prepare one cabbage for 4 people, or divide accordingly for one person.

Remove from boiling water. Place in a glass baking dish. Slice into long strips and bake in the oven for 20 min. Once you’ve removed it from the oven, drizzle the sesame oil and tamari on top.

I never cook oils because they become akin to plastic in the system when heated, and are therefore hard to completely assimilate, which means toxins are created and left in the system. Most of the time there is no need to subject the oil to heat. Oil can always be added to the dish after heating. For cooking methods like sautéing people think oil is necessary, but it’s not. I prefer to sauté in water. If you must cook with oil for a particular recipe, use coconut oil because it is the most stable oil by far, meaning it maintains it’s qualities and is able to assimilate completely.

This cabbage is a bright periwinkle color when served. SO BEAUTIFUL! This is destined to be a hit in your diet because it’s so satisfying, beautiful, EASY, and helps you achieve or maintain your perfect body because there is very little calories, but very high in nutrients. I eat this as a main course. I might sprinkle flax, hemp or sunflower seeds on it.

Rich in nutrition and fiber, cabbage is an absolutely phenomenal source of Vitamin C. A cup of cooked red cabbage will provide you with 90% of your daily vitamin C (immune-enhancing) and vitamin K (bone-building) needs, all for a mere 45 calories. Cabbage is a muscle builder, blood cleanser and eye strengthener.
Even more impressive is that cabbage is famous for a specialized, naturally occurring, nitrogenous compound known as indoles. Current research indicates that indoles can lower the risk of various forms of cancer. Red vegetables are very high in calcium as well as flavanoids, which give the deep red colors of these vegetables. It is best to buy the deepest red samples you can. It is the flavonoids, alongside the Vitamin C, that give red cabbage it’s powerful antioxidant health benefits. It is one of the best sources of flavanoids, so should be treasured as you enjoy every mouthful!

Lenise’s Brussel Sprouts

Green brussel sprouts, as many as you want to prepare
I table spoon olive oil
Dash sea salt
Dash bread crumbs, (optional)
Or Dash brewers yeast (Blythe recommends, optional)

Preheat oven 350. Boil brussel sprouts for 5 min. Remove from boiling water and place in glass baking dish. Bake for 15 min. Remove from oven, drizzle with olive oil, dash of sea salt and bread crumbs or brewers yeast.

Scientists have found that the powerful phytonutrients found in Brussels sprouts, cabbage and other cruciferous vegetables, boosts the body's detoxification enzymes, potentially by altering gene expression (amazing, let’s tune into the power of food)), thus helping to clear potentially carcinogenic substances more quickly. For about 20 years, we've known that many phytonutrients work as antioxidants to disarm free radicals before they can damage DNA, cell membranes and fat-containing molecules such as cholesterol. Now, new research is revealing that phytonutrients in cruciferous vegetables, such as Brussels sprouts and cabbage, work at a much deeper level. These compounds actually signal our genes to increase production of enzymes involved in detoxification, the cleansing process through which our bodies eliminate harmful compounds. Sulforaphane, which is formed when cruciferous vegetables such as Brussels sprouts are chopped or chewed, is already known to trigger the liver to produce enzymes that detoxify cancer-causing chemicals. So, FOOD IS MEDICINE FOLKS! The best medicine, in my opinion, because the nutrients go to the root issue and repair.

Brussel sprouts are also very high in vitamins K, A, C, folate, B vitamins, Iron, manganese, and phosphorus. Vitamin E and calcium are also present in brussel sprouts.

For all of you in perfect health, these foods will assure that you stay there and enjoy your life to the fullest. Extra Information on crucifers vegetables: A study published in the Journal of Nutrition, suggests that sulforaphane may help stop the proliferation of breast cancer cells, even in the later stages of their growth. Brussels sprouts have been shown to help prevent the development of colon cancer in response to exposure to the carcinogenic compounds produced when meat is grilled or otherwise charbroiled. Crucifers' well known cancer-fighting properties are thought to result from their high levels of active phytochemicals, which our bodies metabolize into powerful anti-carcinogens. This is excellent news! In an animal study published in Carcinogenesis, researchers looked at the effects of drinking water supplemented with Brussels sprouts or red cabbage juices on the liver and colon of laboratory animals that were also given a heterocyclic amine carcinogen. The results were that brussels sprouts and cabbage reduced the development of pre-cancerous cells 41-52% in the colon and 27-67% in the liver, and drastically diminished the size (85-91%) of pre-cancerous lesions in the liver. Red cabbage moderately decreased (19-50%) the number of pre-cancerous lesions that developed in the liver and markedly reduced (41-83%) the size of those that did occur. These highly protective effects are due to crucifers' ability to significantly increase the activity of enzymes involved detoxification.
