Raw Butternut Coconut Rosemary Soup

Eating raw/living foods puts more raw/living life force into our bodies, creating a body and mind that is much more ALIVE. Cleansing your system with a raw food detox diet for a few weeks and increasing the amount of living food you consume thereafter will enhance your life in every way. Raw foods help to pull toxins from every cell, improving cellular health, which greatly affects every area of wellness including beauty. Learning simple new recipes like this one is the way to start. You never have to go without amazing food. Even raw chocolate cake or fudge is part of a raw food detox diet.{Cru makes a great one that can be found at Whole Foods in the refrigerated raw foods section along with many other raw chocolate goodies.}

If you’re asking “What is a raw food detox diet?” This simply means eating raw plant foods which have living enzymes, nutrients and sun energy present in them, for 2-3 weeks, in order to encourage the body to detoxify the internal organs, particularly the colon. The colon is tremendously important to every organ, action, and function of the body and mind. An example of a weekly menu is as follows: Breakfast can be a blended green drink (blend kale, lemon, apple, ginger and water, see demo, or fruit or an all raw fruit smoothie. Salads are a great staple for lunch and dinner. A hardy salad with kale, avocado, pumpkin or hemp seed and olive oil is a tremendous bowl of protein, good healthy fat for your brain, vitamins and minerals galore, and fiber. You will feel satisfied after such a salad. Mix it up by changing out the fat source; adding olives, or sunflower seeds, flax seed or flax oil, walnuts or slivered raw almonds. There are so many different wonderful combinations of fats and proteins to add to dark greens that literally create the means for vitality in the body temple. Another lunch or dinner option that I love are raw soups. Enjoy this one.

Raw Butternut Coconut Rosemary Soup

Servings: 4
Prepare time: 10 min

You will need:
2 young coconut (the white ones)
1 cup cubed fresh butternut squash
1 Tbsp raw agave {OR raw grade b maple syrup OR Yacon syrup, OR 4 dates OR 1 Tbsp maple crystals. You have options.}
½ inch fresh ginger
¼ tsp whole cloves
Dash All spice
¼ tsp sea salt
¼ tsp black pepper
¼ tsp fresh or fresh dried rosemary

If you’re using dates, soak the dates for 10 min. while you’re adding all other ingredients to the blender. This helps to soften them for blending, remove pit before adding to blender. Open coconuts by chopping four sharp chops on the top in a square shape and pulling back that square… or ask the produce department in the market to open them for you. They will give them back to you opened nicely and wrapped tightly in the plastic they were already wrapped in. Perfect? Pour coconut water out into a glass pitcher for a moment. Scrap out the coconut meat and add it to the blender. Chop off a portion of the butternut squash and cube, making about a cup full, no need to peel, add to blender. {The remaining squash will stay good for over a week after being cut. There is no need to put it in the fridge. Use the squash for another recipe within the week or bake it that night if you feel you want some cooked food.}

Pour at least 1-½ cups of the coconut water in the blender. Next, simply add all other ingredients except rosemary and blend. If the soup needs more liquid add the rest of the coconut water. If you drank it while you were making the soup, like me, it’s wonderful to add warm purified water from your teakettle. Just warm water, not hot. Enzymes die at about 105-112 degrees F, so make sure the water is only slightly warm. I love adding slightly warm water to my raw soups; it makes them very satisfying in the winter. Lastly, add the rosemary and blend just another few seconds. Pour in a bowl and serve as is or with diced avocado or raw walnuts.
