Raw Chili Chocolate


Today’s Green Diet tip: Raw Chili Chocolate

Yah! Raw chili chocolate! I’ve been experimenting with raw fudge for some time. I always liked what I made because I know how good raw cacao is for me, but the recipe was never perfect. Until now! Fear not, it takes 5 minuets to make. Many of you know that raw cacao has incredible health benefits, ranking top of the list for anti-oxidants, making it a super food. Through expanding our understanding of food, we can indulge in delicious sweets that contribute to our health and beauty, instead of detract from it.

This recipe isn’t spicy in a traditional sense. I never go for spicy foods, but now that l've learned how incredible the chili pepper is, I use it. It's a superb addition to your meals. The chili pepper gives the fudge a soft kick while helping to digest those big holiday meals. Chili pepper also helps our bodies absorb nutrients from the other foods in our system. This fudge just has that hint of something hot. That something hot energizes your entire system, increasing your metabolism, increasing oxygenation and much more. This holiday season; bring a dessert that will add oodles of nutrition to the dessert table. Remember, it is the wheat, dairy and refined sugar in “typical” desserts that add to the waistline and contribute to sluggishness.

Feel free to make varieties of this fudge. For a festive treat, omit chili pepper and add dried cranberries or walnuts, or just make it plain.

Raw chili chocolate

5 dates soaked for 1-2 hours to soften
1-cup coconut oil
1-cup cacao butter

1-cup cacao powder
1-cup cacao nibs (this is the cacao nut broken into bits)
½ cup raw honey

1 chili/cayenne pepper

Remove dates from water and de-pit. Blend all ingredients in the blender just until well mixed or smooth, your choice depending on the texture fudge you want. {The nibs add a great texture. Even if you want a smooth fudge, use the nibs and blend until smooth. I’ve tried using just the powder for smooth fudge, it’s not as good.}

Grease an 8x8 or 9x9 glass or ceramic pan with coconut oil so the fudge doesn’t stick. Pour fudge in pan and smooth out in even layer. Place in refridgerator. Chills to perfection in 20 minutes. Take out 10 minutes before serving. Store in refridgerator.

Coconut is great for your thyroid and your digestive system as well as being very high in several vitamins and minerals. This fudge contibutes to healthy skin, hair and nails. Yah! Bliss indeed.
