Chunky Butternut and Kale soup

Hi

Today's Green Diet tip.

Chunky Butternut squash and spinach/kale soup with spicy option.

You will need:
1 butternut squash
1 red pepper
4 cups spinach or kale
1-quart water or vegetable broth
1 yellow onion
1 cayenne or chili pepper (optional)
sea salt
Black pepper

Chop butternut squash in half, scoop out seeds and set aside, put squash in a pot half full of water and boil/steam for 30 min, or use steamer. Take squash out to cool so that it can be peeled and diced. While squash is cooling, chop onion, red pepper and finely dice cayenne or red chili pepper (optional) and sauté in the vitamin rich left over water from the butternut. Add the water or vegetable broth. Take a knife and make vertical and horizontal slices in the squash, as if creating a tic tac toe type board, take a spoon and scoop out the chunks and add to soup. Add sea salt and black pepper to taste.. Add spinach or kale right before serving. The greens will become their brightest green, and it’s beautiful.

*Sprinkle brewers yeast on the butternut seeds and dehydrate for 12 hours, or place in oven on very low for 5 or 10 minutes. The seeds themselves are a great source of nutrients, packed with vitamin E for your beautiful skin. Vitamin E actually helps cleanse the organs; the result is healthy glowing skin. Brewers yeast is a wealth of vitamins and minerals. Thiamin, Riboflavin, Niacin, B6, B12, Folic Acid, Calcium, Iron, Phosphorus, magnesium, Zinc, Selenium, Potassium to name a few. Brewers yeast also has a good amount of protein and fiber, and it tastes GREAT!! Buy a good quality one.

*I’m so thrilled about farmers markets!! You would think someone like me would know about how amazing farmers markets are, and I did, but I didn’t know a convenient one, so shopping at a farmers market wasn’t in my weekly approach to organic foods. I was happy going to Whole Foods and my local health food paradise, Erewhon. Thanks to a gorgeous girl, shout out to Jama, who inspired today’s newsletter, I now know about my local Monday morning market, and I am so delighted. I got 6 big bundles of organic greens for $6! How great is that! I would have spent $18 on the same thing at a store. This market has pomegranates, sunflower sprouts, every green and root you can think of, berries of all kinds, an abundant heaven of tasty fuel for our excellence, and everything’s a dollar! I felt like I won the lottery. How great! I was concerned at first not seeing the certified organic logo on everything. As you may know, the requirement is; 10 years of non-pesticide or chemical use around the soil before it can be USDA Organic. Most of these farmers had 7-9 years of no chemical or pesticide use on their crops. When we support these farmers, we literally save hundreds of tons of pesticide pollution that would be created if us 33% bought conventional. Plus, I spent 1/3 of what I normally spend. So I encourage you to go online and search for your local farmers markets. If you live in a place were these markets are seasonal, you can order your weekly produce online from a near-by farm. My mom lives in Illinois and recieves a big box of produce weekly. Google: {organic produce delivery, state of residence}, to find a farmhouse delivery near you.
