Acorn squash and beet bake

Hi

Talk about being in love with the fall. Beets are my second favorite food behind kale. Beets are a natural blood cleaner and builder and beautifier. Acorn squash, as well as other winter squash, are very high in vitamin A, C, B complex and Omega 3 fatty acids. These nutrients protect cells, turn food into energy and build healthy supple tissue. You don't have to break down with age, eat right!

Acorn squash and beet bake for 2 (multiply as needed)

1 acorn squash
2 beets
1 Tbsp coconut butter
Pinch sea salt
Pinch black pepper
Sprinkle walnuts (optional)
Sprinkle Raisins (optional)

Preheat oven 425. Simply cut acorn squash in half, scoop out seeds. Put a small dollop of coconut oil or coconut butter in squash. Wash and cut beets in half and place inside squash. See photo. Sprinkle sea salt and black pepper. Bake 70-90 min. With 10 min left sprinkle with walnuts and raisins if you wish, or eat plain. This is so good, and so good for you!

Serve a Simple kale salad with it. My favorite kale salad is as follows.

Rip up 1 bundle of kale, any kind, removing stems.

Dressing:
½ cup cold pressed olive oil
1 tbsp tamari
1 tbsp yellow mustard

Mix dressing ingredients together with fork. Pour on top of kale and massage into kale for about 1 min. This will break the kale down nicely. That’s it! This is a great staple salad. If I eat it for lunch or dinner without another entrée, I sprinkle with hemp or flax seeds and avacodo for more protein and substance.

Kale alone is high in protein, Iron, Calcium, magnesium, vitamins C, A and K. Kale is a wonderful source of calcium because magnesium and phosphorus are present within the food. Milk, for instance, has a lot of calcium, but no magnesium, making the calcium not as likely to get absorbed.

It’s all about your health and vitality. Are you feeling good this fall? Let food be your “go to” for energy and well being. There is no greater relationship, than your relationship with food. We put food inside our bodies 3 or more times a day. What else has that kind of intimacy?
