Quinoa stuffed Raw red peppers

Greetings!

Quinoa stuffed Raw red peppers for two. (Multiply as needed)

You will need:

2 red peppers
1-cup quinoa or 1-cup wild rice
2 heirloom tomatoes
2 cups spinach
Dash asiago or parmesan cheese (optional)
2 cups water
Pinch Sea salt
Pinch Black peppers

Prepare quinoa or wild rice as directed, [1-cup quinoa to 2 cups water. Bring to boil then simmer 10-15 min. Wild rice: 1 cup to 3 cups water, boil and simmer 45 min]. Add tomatoes half way into the simmer, and add the spinach with about 1 minute left. Sometimes I even wait until the grain is done, then stir in spinach. Stir in sea salt and pepper, and asiago or Parmesan cheese, (optional).

Cut top off raw red peppers. I don’t worry about cleaning out the seeds too much; the seeds are good for you. Stuff the raw red pepper with the quinoa or wild rice and you’re ready to eat. This is so good; you’ll wonder why you thought you had to bake the pepper. You don’t have to make a salad because you are eating an entire raw pepper, which is loaded with enzymes to help you digest and assimilate the nutrients in the meal.

Red peppers are high in Dietary Fiber, Vitamin A, Vitamin C, Vitamin E, Vitamin K, Vitamin B6, Potassium, Manganese, Thiamin, Riboflavin, Niacin, Folate, Pantothenic Acid and Magnesium.

Quinoa is a gluten free grain that actually isn’t a grain at all. It’s a relative of leafy green vegetables like spinach and Swiss chard. It is a recently rediscovered ancient staple once considered "the gold of the Incas." Not only is quinoa high in protein, but the protein it supplies is complete protein, meaning that it includes all nine essential amino acids. Quinoa is especially loaded with the amino acid lysine, which is essential for tissue growth and repair. Food is medicine! In addition to protein, quinoa has a multitude of health-building nutrients. Because quinoa is a very good source of manganese as well as a good source of magnesium, iron, copper and phosphorus, this "grain" may be especially valuable for persons with migraine headaches, diabetes and atherosclerosis.
